MickinMD ★ Posted July 6, 2020 Share #1 Posted July 6, 2020 I've usually made blueberry pancakes with tiny blueberries that come in the mix, but since I had a big box of them, I decided on bisquick + milk + egg + blueberries. The first time, I mixed them in a 2 cup measuring cup and most of the blueberries ended on the bottom, a bit clumped together, and in the last batch of pancakes. So here's my solution that worked fine today - except I made too much, thinking I'd skip lunch while doing yardwork. A surprise heatwave and "feels like" 100° ended that plan. 1) Mix the Bisquick, Egg, and Milk separately then rinse and set out the number of blueberries per pancake on a paper towel (5 or 6 for me): 2. Start the pancakes in a hot pan, and drop the blueberries well-spaced onto them while the batter is still wet: 3. They get done on both sides with the berries firmly in place: This was a huge breakfast, six big pancakes from 1 cup Bisquick, 1/2 cup milk, 1 egg, plus the blueberries. 2/3 cup B, 1/3 cup M, 1 egg and 5-7 blueberries/pancake would make 4 nice-sized pancakes and I'll do that next time. Those are Jones Dairy Farm Chicken Sausages bought at Costco. They're 30 Cal apiece (vs the smaller 60 Cal Brown N Serve sausages) and need to be nuked from frozen at 50% power or they get tough - but they're about as good as Brown N serve. 4 Link to comment Share on other sites More sharing options...

I am having deep philosophical problems with your blueberry to pancake ratio. I feel that this should be at roughly 50-50. Real blueberries are so good for you, why count them out??!! I highly approve of the 50/50 ratio myself. And real maple syrup for even more natural nutrition! Isn't 50:50 one blueberry to one pancake? I used 5-6 because, the last time, I threw the blueberries into the container of batter, they sunk to the bottom and there were too many blueberries in the last batch. Next time I'll use more, maybe 7-8. I'll slowly move the number up until I reach what's optimum for me. I want blueberry pancakes, not blueberry jam. One cup of blueberries to one cup of batter. It’s unpossible to have too many blueberries. Blueberries are very high on the health food list, pancakes probably a little below the midline between healthy and unhealthy.
