Sourdough sandwich bread from King Arthur’s website. The first batch I made was too much like Wonder bread so I tweaked the recipe. Reduced sugar from 1/4 cup to one tablespoon. Reduced the powdered milk from six tablespoons to five. changed the 5 1/4 cups All purpose flour to 3 cups bread flour and 2 cups whole wheat. 2 tsp salt and 2 tsp instant yeast. Started with 1 cup sourdough discard, 1/2 cup AP flour, 1/2 cup whole wheat and 1/2 cup water. Let the levain sit overnight and mixed up this morning. More than doubled in 2 hours.
