Three friends made elk for Thanksgiving. We spatchcocked a chicken and roasted it in a cast iron skillet. Hank Shaw is the master of game cooking. I had an antelope tag and my GF had an elk tag, but life got in the way of hunting this season. Last year we struck out. This is a friend. You can see the hoof.
