I had a variation on dirty rice.  Cajun trinity (onion, celery and bell pepper) finely diced and sauteed in olive oil until soft. Added three cloves minced garlic and a blend of salt, black, red and white peppers and thyme.  Added 1/3 cup of each: red lentils, pearl barley and arborio rice.  Two cups chicken stock.  Covered pot and tossed into a 350 oven for 45 minutes.

 

That and a fresh peach.
