So, what is your favourite cheese for a salad?

I am going to have to go with feta.  It has just the right zing either by itself or to complement other strong flavours like jalapeno or peach.

We have an excess of goat cheese, and that is more of a specialist - totally awesome with golden beets, nuts, and/or spinach, but just so so without those buddies.

Grated sharp cheddar is good too.

Gorgonzola/blue cheese is good but feels decadent.

So what do you think?

Smoked Gouda. It’s the only cheese you’ll ever need. 
 

When I wrote my wine column, there was a chef that seemed to use Chèvre in everything she made. I got tired of it. Reminded me of Feta (I think they’re both Goat Cheeses) and I’m tired of that, too. Gotta get Gouda. 
 

Unfortunately the chef died in a car wreck along the NY State Thruway near Seneca Falls a few years back.

I stumbled onto a Russian market 10 years ago or so, and they had at least 20 different feta cheeses in their deli case, and at least that many prepackaged on the shelves.  I was shocked at how different they were!

Russians like feta, apparently.  They also thought I was Russian when I went in there, they always started speaking to me in Russian until I clued them in that I was a gringo.

While I prefer Raclette the traditional way melted over potatoes and onions, it can be a backup for a salad. Shredded Gruyere had a nice distinctive taste that isn't overwhelming and compliments the other ingredients of the salad. If available, some Gouda is great.
