Pickled beets and eggs. Learned to love them when I lived in West Virginia.

First I heard of them too. The potatoes were raised for roasting not boiling so I thought I’d try it. So7 called them chunky potatoes. I like the way they turned out. It’s a do over.

I love Brussels sprouts.  I buy a bag of 20-24. trim the stem and cut them in half, and add them to a "savory fall stew" I adapted from a Martha Stewart recipe along with chopped up Italian Sausage, onions, parsnips, carrots, potatoes, butternut squash, fennel, tomatoes, seasonings and chicken broth.  A different taste in every spoonful and those Brussels sprouts make a big statement!

I freeze a couple bowlfuls from every batch I make, being careful to thaw them later in the microwave on defrost, not high, to keep the veggies from getting mushy!
