"Pizza" thanks to Ugly Bob (OMG)

I made a slight modification to Bob's suggestion for a cauliflower and damn it was wicked pissa!

  1. Steam two heads of cauliflower (you don't need it all).
  2. Mash it with a potato masher.
  3. Add three cups of mashed cauliflower.
  4. Add 1/2 - 2/3 cup of some type of flour.  I used a gluten free mix along with some finely ground cornmeal.
  5. Add garlic salt. Maybe a 1/2 teaspoon.
  6. Add ground black pepper, again, maybe a 1/2 teaspoon.
  7. Add 1 egg.
  8. Mix well and let stand for 15 minutes.
  1. Heat oven to 400.
  2. Spray pizza pan.
  3. Spread mix evenly over pan.
  4. Cook for 15 - 30 minutes until it hardens up and the edges turn slightly brown.  I think this part was key, you don't want it soggy.

  5. Top with whatever you want and put it back in until you think it's done.

Damn, this was one really good pizza.  We ate the whole thing and since it was mostly cauliflower, I don't feel all that guilty about it.
