For breakfast variety I used to wrap some sweet potato in a warm flour tortilla and eat that like a breakfast burrito. Simple, nutritious and filling. In the fall, I made some chili beans from small red beans cooked in the chili style, so that if you preferred, you could add to Texas chili for the meat and bean experience. All the Texas chili is gone, but I had two quarts of chili beans in the freezer. I thawed one of the quarts and used 1/2 cup sweet potato and 1/4 cup beans. Heated in the microwave. Heated a flour tortilla, added shredded cheese, beans and sweet potato, then more cheese. Wrapped up burrito style for breakfast.
