I almost always use potatoes with very thin skins now for everything and don't peel them: usually gold and sometimes red potatoes. I was helping mom with the dishes and took a big bite out of dad’s potato skin as I was clearing his plate into the wastebasket. He’d used the skin as an ash tray, though.
