Yes.  I almost always use potatoes with very thin skins now for everything and don't peel them: usually gold and sometimes red potatoes.

Gold potatoes nuked then browned in a frying pan with onions then served with two eggs; ham, bean, and veggies (including unpeeled baby gold potatoes) soup - all with very thin skins:

Yes.

One time, long long ago, eating the skin got me into a little trouble, though. I was helping mom with the dishes and took a big bite out of dad’s potato skin as I was clearing his plate into the wastebasket. He’d used the skin as an ash tray, though. And I ended up with a mouthful of cigarette ash. Blech…
