V-8 vegetable juice is, in theory, good for you except for the salt. I buy the low sodium variety but the flavor is a little bleak. So my lunch time treat is prepared with celery seed, black pepper, tabasco, and occasionally Worcestershire sauce. That's how we do it here in the abbey.

It is carbs but vegetables are carbs. I would think less nutritional carbs would be targeted for removal from the diet. Stuff like tortillas and pasta.

I also tried the low-sodium stuff and thought it sucked.  I only drink a 12 oz can of V8 about once or twice a week - sometimes it's my lunch on a very busy day.

I had been having trouble finding V8 in 12 oz. cans earlier this year and came across a 24-pack case for cheap at Costco.  That should last me until the Fall.
