Have we talked about meatloaf here recently?

We have tri tip roast leftovers. :D

I've been thinking about it.  They have this marinated Beef at Costco.  It's claimed that seasoning in addition to the marinade is minimized on a true Santa Maria, CA roast, so it's limited to salsa.  That works for me, especially since I love salsa.  The plated picture on the bottom - with scalloped potatoes as the big side - is great with 1/4 cup of salsa.

Not meatloaf, but I did make a side of oven baked zucchini and sweet onion dip. Recipe is found on https://www.kingarthurbaking.com/recipes/baked-zucchini-sticks-and-sweet-onion-dip-recipe

I make these a couple times a year.  I do not make the dipping sauce

The dipping sauce is phenomenal. Sweet onion caramelized in butter. Add 2 Tblsp cider vinegar, honey and 1 Tblsp mustard. One cup mayonnaise and/or ranch dressing. Process until smooth. Voila, sweet onion dip.

But they are so good with just the sticks

Did you get a rendition of "Paradise by the Cockpit Lights"?

I listened to “Bat Out of Hell” a lot in high school. Hadn’t heard it aside from the hits for many years. Listened to it end to end a few years ago. To me, it didn’t age well. I keep this mostly unpopular opinion to myself.
He performed at the arena in Grand Island a few years ago. People who were fans were creeped out by the “Paradise” performance.

I almost made that style.  I went with herb/oil.  Santa Maria is a popular marinade.  I will try it next time.
