Blend the following: 3 or 4 tomatillos, yogurt, a little mayo, if you want, buttermilk,, lime juice, scallions, cilantro, ranch seasoning, hot pepper (I added a long cayenne and a fresno both with seeds), and garlic. It all raw, so no cooking required. Keeps for about a week in the fridge. I roasted a spag squash, and cooked some potatoes with shallots, garlic and a bunch of chard. I spread the dressing over all of it.
