Two soups today. Butternut squash is roasted and ready. Battuto is ready (onion, celery, carrots) Two sweet potatoes need peeling and dicing but I’m taking a break right now. One soup will be butternut squash with lentils, the other Italian sausage with sweet potato and spinach. Maybe some cannellini beans will be added.

Is this something you would normally make, or is it new due to WoPTJ's recent hospital stay?

Either way, do you have a third chair at your dinner table? Asking for a friend....

Normally, soup is a new year’s dish here. Friends used to host open houses on New Year’s and make 3-4 pots of soups. Come by anytime between 10 and 3. Have soup and socialize. Come on by.

I would but I’m a poor man trying to make it in America and you might start acting like your MIL once you move in.

Well I promise not to pee on your furniture!

Speaking of heathens (cooking), I knew mirepoix, but battuto was a new one in me. For the similarly I enlightened,

Lol.  If in Sicily and someone on the street offers you a battuto, decline.  It would be the same as being offered a knuckle sandwich.  In cooking though, it means to beat down the base ingredients.  Beat down means finely chopped.
