Zephyr Posted January 1 Share #3 Posted January 1 We make a crustless Quiche, make them in Silicon muffin tins then freeze them. I often grab two of them, some sugar snap peas, cherry tomatoes and some baby bell peppers and voila. Lunch! The quiches I take out of the freezer the night before and throw in the fridge. They can be eaten warmed up or not if you don't have access to a microwave 1 1

Dirtyhip Posted January 1 Share #5 Posted January 1 I am a beans and rice fan. Also, salads. Salads do become more complicated for bike commuting. Also, I like hummus and celery. Pb and apple. Easy things.
ChrisL Posted January 1 Share #6 Posted January 1 Tuna, tinned fish like sardines, boiled eggs, veggies & fruit. I also kept hot sauce at my desk to spice up the eggs & sardines. I don’t have my own office anymore so have cut down on tuna & sardines but those were a common item with my last job.
Ralphie ★ Posted January 1 Share #7 Posted January 1 For better or worse, I eat a lot of froot for work lunch and snack. Two apples or peaches depending on season and usually an orange.

MoseySusan ★ Posted January 1 Share #10 Posted January 1 I’d put a few frozen shrimp into one compartment, some broccoli or green beans in the other, and a bit of olive oil with garlic, salt, and pepper into a small lidded container. At work I’d put the thawed shrimp and veg into my hot pot with a bit of water and steam for a few minutes, then I’d drain the water and add in the oil and seasoning to finish. 1
MoseySusan ★ Posted January 1 Share #11 Posted January 1 I also ate peanut butter and jelly sandwich and carrots a lot.

groupw Posted January 2 Share #16 Posted January 2 One of my favorite salads to take is spring greens with goat cheese, pistachio and dried cranberries. I keep the raspberry vinaigrette in its own container until lunch. Some crackers or potato chips for crunch. A tamale and some rice. If you have any street tamale ladies up there, that’s the way to get them and very inexpensive! WoW and I were homesick for Runzas so she made a batch. They heat up great in the microwave. I’m making some chili right now. A little of that with a grilled cheese sandwich. I was taking leftover lasagna from Christmas dinner but I think it’s gone now.
