Cooking Shows

As far as the real cooking shows go, I learned a lot from shows by Julia Child and Jacques Pepin and America's Test Kitchen because they told you WHY you cut, chopped, fried, boiled, etc. the way they did it.  I would be thrilled that I boiled the pasta right, cut the carrots right, include milk-soaked pieces of bread (a panade) in my juicy burger or meatloaf mix, etc.  The shows were about cooking Spaghetti, French or Country Omelettes, Beef Stroganoff, Pot Roast, Baked Fish, etc.  Everyday things.

Today when I look at the shows, except for Sara's Weekday Meals (Sara Moulton), they're usually making something like Braised Mongolian Beef with Moo Boo Sauce and Peruvian Incan-flavored potatoes.  They're not cooking shows, they're "A Whole Day in the Kitchen" shows edited to fit the show's time.

And I've become skilled enough to know when they could be doing it in a much quicker way.

A cooking show I can watch. Not a fan of most cooking shows. I received an email today from Serious Eats for Malloreddus Alla Campidanese. A homemade pasta dish (Sardinian Ridged Pasta) with a saffron and pork ragu. It would be a day spent scouring remote little shops for the right ingredients (Sardinian wine, and Pecorino Sardo, a Sardinian cheese) and another day spent putting it together in the kitchen. But that makes me happy. A few of my audit travels carried me to La Maddalena, just off the coast of Sardinia. It is a lovely place with warm and lovely people.

that pasta dish sounds yummy!

I like shows that mix travel with food. Probably liked Anthony Bourdain the best. Alton Brown is entertaining but there’s no way my cooking gets that elaborate. Same with Martha Stewart. Zimmern is interesting, but I’ve seen every episode 5 times. . Not sure who will carry the torch in the future for me.

👍 I like his show a lot. He went to the less traveled, less touristy areas. My kind of guy.:nodhead: I prefer a dark bar off the beat'n path than down town partyville.

He did a show in Detroit, not sure if it was No Reservations, or Layover. But some people didn't like it. But I did. He showed the real Detroit.
