Have we ever talked about guacamole here?

I can eat it now that it doesn't cause massive reflux.  How do I know if I have good guacamole?  What makes good guacamole?  Can I make guacamole?  What are the guacamole secrets?

Also, cilantro tastes like ass, please don't suggest cilantro in guacamole.

Whack-a-mole is very easy to make. You add what you like to the mashed avocado. I use a little diced onion, jalapeños, garlic, salt, cumin, and a squeeze of fresh lemon or lime juice. You can also add cayenne pepper or hot sauce if that floats your raft. The word avocado is a transliteration of the Nahuatl (Aztec) word aguacate which also means testicle as avocados grow in pairs. Think on that as you mash the avocado!

As avocado is inexpensive and readily available in backyard trees we eat it a lot. The key is perfectly ripe avocado’s.  When you squeeze it gently, it should yield  but not be mushy.  If it’s rock hard let it sit on the counter for a few days. 

It’s really easy and there are many ways you can make it. I dice onion, garlic powder, salt & a light squeeze of mayo for smoothness.  One of my favorites though is just to mash a couple of avocados in my favorite salsa.

I bought a guacamole dip at the store to eat while watching NFL games this week.

It was a spur of the moment, let's-do-something-different idea - the only time I usually eat it is when a group of us goes to an excellent Mexican restaurant called Mi Pueblo where a worker pulls a cart up alongside your table and makes it in front of you.  The women in our group control what goes into it and it's really good so I haven't paid attention.

One "authentic." "Best Ever" recipe says: Slice three ripe avocados in half, remove the pit and scoop them into a mixing bowl. Then use a fork to gently mash them to your desired level of chunky or smooth. Add the onions, tomatoes, cilantro [leave it out or replace with oregano if it bugs you], jalapeno pepper, garlic, lime juice and salt and stir everything together. That’s it. The most delicious, easy guacamole.

 

3 avocados, ripe

1/2 small onion, finely diced

2 Roma tomatoes, diced

3 tablespoons finely chopped fresh cilantro

1 jalapeno pepper, seeds removed and finely diced

2 garlic cloves, minced

1 lime, juiced

1/2 teaspoon sea salt

The best guacamole I’ve had so far was from a full service Mexican restaurant back in Grand Island. Sadly they didn’t survive the lockdown. Normally I will eat it if it’s there but I don’t go out of my way to order. It. That place was the exception.

Ok, Freshdirect screwed up and sent me four avocados for the price of two, I think I will make some of this at lunch.  

I have avocados, limes, jarred garlic, onion tomatoes, pickled jalapenos, am I missing anything?
