Swedish meatballs are boring

I love swedish meatballs.. I will be making some for our friends house on new years eve.

 

I wish you could have tried mine.  They were tender and very juicy.  The sauce came together the way the recipe intended,  It's just that the flavor was not as complex as I usually shoot for.  They just tasted like meatballs and gravy to me.  I would have added some dijon to spice it up, but I was completely out of it.

 

Do you only add salt, pepper, nutmeg and cloves?  Am I missing something?

 

Basic recipe was beef & pork, with panko and one egg.  1/4 tsp of cloves and 1/4 tsp of nutmeg.

sauce had butter flour, beef stock, and sour cream to finish.

here is what the recipe says for me to add... that are awesome! 

 

Ingredients

2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

I meant allspice not cloves.  This is the same recipe I followed.  I found it boring and bland.

The last time I had swedish meatballs, they were very bland.  

 

This is why I find them boring.  There is no complexity to them.

 

I make these fantastic lamb meatballs.  The spices I put on them make them pop.  The recipe calls for cumin, turmeric, salt, pepper, cayenne, cinnamon, fennel, and coriander.  The flavors are super intense.  I put an herb sauce with it that has cilantro, mint, ginger, cumin, yogurt, serrano chili, onion and lemon juice.  There is so much going on with that dish.  I enjoy more spicy recipes lately.
