Yes indeed. Mine isn’t that old, but I believe that age of a sourdough starter is immaterial to the flavor imparted. Flavor is derived more from the yeast itself and sugars (flour) used to feed it. The airborne yeast in my kitchen will be different from yeast in someone else’s kitchen. The yeast also reproduces every time it is fed and can introduce new yeast strains altering the flavor profile. I call my homestead, The Wild Yeast Ranch.
