Sunday dinner

It was one of those internet pop ups...Tuscan Tuna Salad....

2 6oz cans of Tuna....drained

1 15 oz can cannellini beans rinsed and drained

10 Quartered cherry tomatoes

4 scallions trimmed and sliced

2 Tablespoons Extra virgin olive oil

2 Tablespoons lemon juice

1/4 tsp salt.


This is the first time I have made it...I did have some pitted black olives...they sounded "Tuscan" to me...so I diced up some of those and tossed them in...I didn't have to many...so they probably won't make a big difference.  I just had about a Tablespoon to taste...pretty good..tomorrow will be the true test...I am thinking it is a lot of tuna.... but hey this is the first run.
