Tonight I was using raw cauilflower so I used it in small batches in the food processor.  Roasted the garlic in the overnight.  Threw them both in a skillet with a little butter.  Cooked on highest heat, stirring all the time.

Sometimes I have leftover previously roasted or steamed cauliflower.  Then I just put it through an old fashion ricer,. That also takes out the extra water which makes it nice and fluffy.

You can grate it raw with a box grater but I have never done that.
