I riced some cauliflower and mixed in a little butter and freshly roasted garlic. Then the main portion was a portabella mushroom stuffed with a mixture of carrots, onions, kale, peppers, and feta cheese. I mixed a bit of hot sausage in at the end for flavoring. Then stuffed it in the mushroom and grilled until the cheese was gooey. It was delicious. 8 1 Link to comment Share on other sites More sharing options...

Roasted the garlic in the overnight. Threw them both in a skillet with a little butter. Cooked on highest heat, stirring all the time. Sometimes I have leftover previously roasted or steamed cauliflower. Then I just put it through an old fashion ricer,. That also takes out the extra water which makes it nice and fluffy.
