Dealing with late season peaches

I am doing better - the trick is they ripen much mo' faster than summer peaches.  You can;t let them get as soft - once they are too soft, they turn to disgusting mealy mush, but if you get them while still slightly firm, they are ok.  Not nearly as flavourful as summer ones, but stil good.

And that's all I have to say about that.

Wish you had tod me sooner, yesterday I peeled and bagged 12 quarts for the freezer and some were a disgusting mealy mush.

Some mealy mush can;t be escaped, we can just aim to minimize it.
