This sounds marvelous! I think, though, I would first try a variation of putting crunchy oatmeal, brown sugar, and sweet potatoes on my pecan pie. If you are surprised by sweet potato pie, you're going to freak out at the possibility of gooseberry, green tomato, and vinegar pies. My great grandmother made those in her home and my mother all except gooseberry. I grew cape gooseberies in the garden one year but didn;t really make anything oot of them, just ate them raw. Yesterday I had coconut cream pie. Very good!
