Do you use a meat thermometer?  That looks pretty good btw.  I'm going to have to try that.

I didn't use one this time (somebody else has mine for the moment).  The recipe is one that I consider among the 10 best recipes of all time, I would definitely try it if I were you.  Btw, I keep a lid on the dutch oven for the first half of cooking time.
