Just a little water covering the cutup fruit, with 1+ tablespoon smashed,minced ginger root and 2 tblsp. or more of crushed aniseed. Boil and heat for 25 min. I had to boil off extra water because the ripe plums really liquefied. The compote was a deep rich red colour when all cooked. Below it is still light coloured. We never add sugar. You could add some maple syrup or honey if needed. We cooled it slightly and had some with...cardamom ice cream. So lovely and complementary in spice flavours for ...autumn.
