I shot the rancher's four-wheeler and killed the Kobe steer with the knife.

So I tried something new, saw it on Good Eats, Reloaded. 

I rubbed a tsp of salt on each side last night & put it uncovered in the fridge last night. 

I baked it in the oven @ 200 until the internal temp was 120, let it rest for 10 minutes and put it on the 600 degree grill for a minute on each side.

Done perfectly (MR).

It was too much salt,  I'll  go with about 1/2 tsp on each side next time.
