Hunk of rib eye

Cut it up in chunks for Shepherd's Pie.  This is one of my favorite all-time recipes (it's much more Irish than Corned Beef & Cabbage which is an American thing) by an Irish woman who has a small catering business and it has a really great tasting sauce. When I make it, I often make 5 of them in those disposable, aluminum, about 12", lasagna pans and freeze 2 and give the other two to my siblings who look forward to it. It calls for ground beef or lamb but steak chunks work fine, too, I usually get Idahoan mashed potato packages (four cheese or garlic, etc.) where you just add it to hot water and I make it just a little thin so it doesn't spread too thickly over the top and it thickens as it's baked: https://www.geniuskitchen.com/recipe/traditional-irish-shepherds-pie-302120

I've been trying to use my 6 qt. pressure cooker more often and here's a "Mom's Beef Stew" recipe that seems like it can't miss that I'm going to try (the ingredients don't include "frozen veggies for soup/stew" but clearly from the corn in the picture you can obviously add more veggies than in the ingredient list: https://www.geniuskitchen.com/recipe/moms-beef-stew-pressure-cooker-190464

Going the other way, here's another I've been planning to try: a Slow Cooker recipe for Beef Tips and Noodles that's in the same ball-park as Stroganoff (just add some sour cream at the end!) where the beef broth it calls for can be subbed with beef or chicken bouillon or "Better Than Bouillon" paste: https://www.geniuskitchen.com/recipe/slow-cooker-beef-tips-and-noodles-208952

Genius Kitchen is a favorite site of mine when I'm looking for recipe ideas and you can sub chopped-up steak for many of the ground beef recipes here: https://www.geniuskitchen.com/search/beef

Personally, a go-to starting point for me for spaghetti sauce, Stroganoff, chili, and Sloppy Joes starts with beef chunks or ground beef fried together with onions, red or green bell peppers, and minced garlic.  That works with a lot of stuff.

I like it shaved down and cooked on my griddle to make Cheesesteaks.

One of the best things I ever ate was a big hunk of ribeye that I smoked low and slow with sea salt and black pepper.  It was amazing.  Leftovers went into the crockpot shredded with Aus Jus and became steak sandwiches the next day.

You could also cook it up cut into cubes on a griddle and then make some great casa deeyas with it.
