New recipe and celebration

I have lost 13 pounds since Dec.  I'm super inspired now.  I'm trying some new recipes lately.  Here is another one.  It's yummy and nutritious.

I love this book.  Recipes are super delicious and lots of veggies.  I am not going to label myself anything, but I do enjoy many more plant based meals.

From a VEGAN perspective, I really like this woman's blog.  We have made several of hers, and a few are "staples" now of our favorites even though we aren't vegans.

I am also looking to Chef Andes book:

If anything, the increased veg is good.  I don't want to go full blown anything.  I hate definitions and am not someone that wants to be boxed into anything.  The diet would be too strict to maintain and I truly think that fish and lean meats have their place.  I am just adding way more veg based meals and things like that.
