Quinoa is a really good grain to eat.  It is filling and has lots of amino acids.  I like spicing it up with fresh herbs.  Often, I use cumin.  Last night I did it with salt, white pepper, a bit of coriander and cumin,

I did crispy shallots with it for a nice topping.  I took a mandoline and sliced shallots really thin and fried them.  Once they are browned up you drain off. You can reserve the oil for vinaigrettes,  if you wish.  It is nice to save for cooking other veg too.  

The quinoa with the crispy shallots were a hit.
