Yeast Water

It starts with nothing more than dried fruit (raisins) in water, and time. 

When the fruit floats to the top and the water bubbles, it’s ready. Burp the jar every day

Wait. Can this explode if you forget to off gas? Can't you just put the lid on loosely to allow air escape?

Yeah - what exactly is the "yeast" that is created (grown) here?  If it is in the liquid, what do you do with it?  Is this something Allen bakes with? Is this different from normal yeast (powder)?

It seems neat (minus the massive explosion of glass shards that would surely happen in my house since we generally forget lots of things :D )

Yes it can. Leave the lid loose.   Forgot about that point.

Yeast water is like sourdough. It’s a source of yeast for bread baking.

Day two:

Gave it a swirl. The raisins are swollen but not floating yet.

Day 3:

Raisins are starting to float.

Day 4:

Raisins are floating and starting to bubble. Yeast is ready to use. 

This evening I’ll start a loaf of bread with it.

What do you do with the dried fruit?  Smoothie?

I have a bag of dried apples.  I think I can use these.
