Ricotta

So I bought a container of it...15oz thinking I needed it for the baked ziti and Italian chicken sausage dish I brought to my friend who is undergoing chemo.  Nope need mozzarella :wacko: Only thing I have done with Ricotta is Lasagna or stuffed Manicotti ...I am watching my carb intake...any suggestions what to do with it other than giving the Ricotta away :dontknow:

The recipes on that blog almost make me want to cook!  And they're usually healthy too.
