Yes and no. I use a dry rub, mostly pepper and salt. Leftover rub is used with cider vinegar to make a sop. The sop keeps the meat from drying. I only sop when I lift the lid and tend the coals. Good barbecue let’s the meat sing on its own. I don’t serve a sauce, but I could. If I made a sauce, it would be ketchup based with vinegar and spices. Or a NC pepper and vinegar type sauce. This pork Bbq didn’t need anything

Looks really good. I get tired of trying bar-b-que that does not have a smokey taste, and really needs the sauce.  Ate one serving of that type at the fair this week, but I didn't go back.  I need to get ours going again with some mesquite that is in the wood pile.  Been wet enough this summer that finding dry wood has been a bit challenging. Have several pork loins in the freezer that need to be cooked and eaten.
