Prize-winning pork jerky

So dearie's butcher cheffy son just won the grand prize for the category covering jerky and sausage.  At the Royal Winter Fair...a major Toronto agricultural show.  He made pork chili and fennel pollen jerky.  His other entry...a chili pastrami placed a lot lower in the rankings.  He competed over 10 other chefs.

 So son is going nuts now making jerky....'cause he's required to have 400 pieces for sale as part of the winning showcase.  Methinks he's gonna pump up to 900 or more to sell at butcher shop.  Maybe offer some via shop's new online ordering portal which dearie has been designing for son for past 3 months. 

Dearie is very proud.  He's currently making up  a graphic to announce this win for the shop to tweet out.  Like all fathers know, he is a father forever.

Now son is figuring out the costing per pkg. and how to pkg. it.  Dearie has to gently encourage him ….it's demanding because son has 2 young sons and his wife also works full-time. So it's pretty demanding running your own shop.  

Son knows he's incredibly lucky to have a father who does all sorts of sophisticated financial analysis.

I’ve only had beef and bison. The bison was good ‘cause it was laced with hot pepper.

Bison jerky is very good. I've also had air dried bison sausage.

I didn't realize until it was pointed out....about the pork jerky rarity.  I just found out the pork is marinated and smoked first.
