Our Local Bagel Store's are so so, but at least they are fresh. I like two kinds of high end bagels - both the official hardish NYC ones and the bigass bready oh so good ones. I do the Joy of Cooking recipe for bagels and add more WW and vital gluten for stretch. They say sugar and salt in the water. Mine seem softer. I never get that really hard crust. I get a bagel you noted but it also has thinly sliced red onion and a slab of tomato.
