So I am on my way home, thinking about something for dinner...and NPR talked about this town in Italy that has 300 residents over 100 years old...and their diet...I remembered that I had some anchovies and started thinking about what I could make...
So I started cooking some pasta..while that was going..I put onion, red pepper, mushrooms, garlic, broccoli and cauliflower in a pan with some olive oil...I added the cooked pasta and some of the anchovie (they were kinda dissolved so I guess they were past peak in their can. Added to that the remaining black olives and artichoke from a couple of jars in my fridge...tossed with some parmesian cheese.
Not my best effort..but not too bad...and I used up: mushrooms, red pepper, olives, artichokes and the 1 can of anchovies.
