tonight's dinner

I have had an enormous appetite the past few days.  I had a 2nd lunch with two "Beddar with Cheddar" Johnsonville Smoked Sausage hotdogs on 647 (low carb) hotdog buns and some chips.

So I'm using up the 1 lb of shrimp in the freezer for dinner: 481 Cal, 4 g Carbs, 8 g fat, lots of Iron, Calcium, and Vitamin A.

I'll make it a little less healthy with cocktail sauce but not enough to ruin the low carbs: it should still be great for my diabetic blood sugar.
