dinneR ★ Posted January 26, 2018 Share #6 Posted January 26, 2018 Must be a good library. We should probably judge libraries by their selection of pie books.

And yes, a pie is sugar, salt and fat but it is soo good for you. Fresh fruit, nuts, savory. All kinds of pies. I'm going to look for leaf lard at the butcher and use some European butter as it has a higher fat content with less water. I'll post pictures when I do. Spring is coming. Rhubarb pie. Blueberry. Peach. Apricot Raspberry.

My wife's grandmother was a phenomenal baker too.
Ralphie ★ Posted January 26, 2018 Share #9 Posted January 26, 2018 Ok, after some reconsideration I guess there is salt hiding in there!
Longjohn ★ Posted January 26, 2018 Share #10 Posted January 26, 2018 I was quite the pie baker for many years until the lies about Crisco being the healthy alternative to lard were exposed. I just quit baking pies altogether then. They never really were considered health food.

Even sweet pastry has its pinch of salt, ralph, and allus has - it isn't a new fangled thing like the salted caramel, for example. Salt, the original flavour enhancer.
