Hot Sauce

First batch of sauces from the ghost peppers. Made 16 oz from 4 ghost peppers, 2 jalapeños, red peppers, shallots, and garlic all roasted on the BBQ. Pureed after skinning and seed removal with white vinegar and nectarine juice. 

So doG damn hot it's scary but man is the flavor amazing and it hasn't even come fully together yet. Filled 4 bottles like pictured.

Have tomato puree onbthe crockpot for a cumin and thai blend i make, the heat will come from one more ghost pepper i roasted.

BBQ is tomato, garlic, cumin, ginger, and only 1.5 ghost pepper. Has a sweet heat that builds but isn't danger levels.

I am not a heat person when it comes to food but that looks and sounds amazing.

I like more flavor than heat. But a little heat is ok.

I gave up growing ghost peppers.  Not much use other than hot sauce, and I like less heat than that in my hot sauce. 

The batches I made were crazy hot, but too hot to really enjoy the flavor.  So now I use Serranos.

I have a fairly high threshold but others who've sampled don't and it seems to be that happy medium of hot-hot but not overpowering. 

I have planned; jellies, candies, and infused honeys, I'm gonna make an oil extract, and goat cheese balls (seems this is a thing)

Goat cheese pairs nicely with heat.
