groupw Posted August 1, 2020 Share #4 Posted August 1, 2020 Beautiful Miata weather. We drove to a nearby town with a great Italian beef panini. Beer selection was weak so I had a soda. Stopped at DQ for mini blizzards on the way home. Ate them on the patio and just lounging outside. Getting just enough nip in the air I may head in soon. The mozzarella sticks are from a box. 🤬 They’re pretty horrible and ridiculously expensive, but I haven’t quite yet got my own dialed in - and SO loves her some mozzarella sticks. I end up with breadcrumb and mozzarella soup - tastes pretty good though. I will, however figure it out and they will be better. Airehead Posted August 1, 2020 Share #12 Posted August 1, 2020 I do this recipe from Giada De Laurentiis, because you freeze the whole thing not just the cheese. 1 Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days. 2 Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. That’s how I was figuring on doing it. I tried one batch dusted with porn corn starch that worked pretty well. Didn’t take very long to brown and crisp, so the cheese didn’t melt too much. Flavor was a bit -meh- though. The ATK cookbook has you mix breadcrumbs and a little butter in a pie plate, then microwave it to brown - even before you put it on what you’re frying. I know virtually zero about it and followed this. (Only thing I didn’t do was line the water pan with foil - I just used water). I’m not even sure what cut I used - whatever I was trying to get rid of in the freezer. I cut it into three chunks, cooked all three, then sliced one and froze the other two. Whatever cut I used was a bit tough - for the most part, I was able to get it sliced thin enough, but there were a few pieces that were chewy. The frozen chunks I slice while they’re still partially frozen, when I take them out. This makes it easy to cut them paper thin.
