I have been making my own dressings lately as well.  I make an Asian dressing with soy cut with water, sesame oil, ginger powder garlic & a touch of sweetener.  I also like balsamic, EVOO, garlic & onion powder is another quick & easy dressing.

I like Italian Vinegar-and-oil type dressing so it sounds good to me!

My go-to salad dressing is Kraft Lite Zesty Italian. - 10 Cal per tbsp. so I can load it up.

Sounds interesting.

I like a half grapefruit with an orange, some olive oil, touch of garlic and salt and pepper. Simple but pretty good. Just a touch of Dijon to help it emulsify.

for pre made I have been enjoying the Olive Garden signature dressing. It is pretty good for something quick.
