...or is it just get one of each?  Wednesday the "Roaming Coyote" is in the neighborhood, so I might have to swing by an grab some tasty vittles.  Al Pastor usually wins, but Cochabamba looks enticing.  Not sure how big they are, though, so I could see a Cochabamba, a El Pasor, and maybe El Jardin?

Cochabamba: Blackened fish, spicy slaw, pickled onion, chipotle aioli, & cilantro

El Jardin: Grilled Veggies, Avocado creme, queso fresco, pico, & cilantro

Al Pastor: Pulled BBQ Pork, grilled pineapple, salsa verde, & cilantro

Honestly, of all the food trucks, none that I know of went with hot dogs.  It seems the street vendors selling them may steal too much of their market? A few have come and gone, but I don't remember seeing any, so that's a bummer.

Since there is no lengua, I would say Al Pastor. 

We had a couple restaurants that had Chori Pollo on the menu. Chorizo and grilled chicken together. Served like fajitas. Awesome! One changed owners and the new owners didn't carry it over. The other served it at their sit-down restaurant, but that closed during the lockdown. They never offered it at their other place..
