A bacon education for my American friends.

There are several iterations of what y'all call "Canadian bacon" sold all over the country.  The most common served in the US but passed off as Canadian is actually just ham.  What it imitates is the French method of pickling and smoking of a pork loin, then rolling it in pea meal.  So, it isn't "Canadian", it just represents the nearest culinary product to bacon as it is pork, thin sliced and fried. 

The differences between US and real Canadian bacon are very small.  They generally look the same and taste the same but the US uses pork bellies which is fattier than the pork sides used by Canadian producers.  

So, US made Canadian bacon is ham, Canadian bacon is bacon and French peal meal bacon is Pea Meal bacon.  Capice?

Wait a minute.  That is EnglishBreakfast Societies version of Canadian bacon.   Order bacon in any Canadian restaurant and you get either pork belly or pork side bacon.  If you want what the brits call Canadian Bacon, you have to order pea meal bacon and don't be surprised when they say, "We don't have that".  Except in Quebec.  They have it there.
