The most common served in the US but passed off as Canadian is actually just ham. What it imitates is the French method of pickling and smoking of a pork loin, then rolling it in pea meal. So, it isn't "Canadian", it just represents the nearest culinary product to bacon as it is pork, thin sliced and fried. The differences between US and real Canadian bacon are very small. They generally look the same and taste the same but the US uses pork bellies which is fattier than the pork sides used by Canadian producers.
