Why is lunchmeat called lunchmeat?

My guess is that the term originated in days of yore when meat very expensive and was a much smaller part of the average person's diet.  Any small pieces of cooked meat from dinner were treasured and saved, then used in lunches the next day before the meat went bad - no refrigerators in existence then.

I have no idea if there's any truth to that, but it sounds good!
